Terada Honke "Shizen no Manma" Kimoto Junmai Muroka Nama Genshu
This brewery grows its own rice, its own koji spores, and sources its water from a nearby shrine, controlling the entire production process start to finish. This is the wildest, most "natural" sake expression we've seen. Yogurty acidity, vanilla, and big structure

Dassai Blue 23 Junmai Daiginjo
An extremely elaborate sake, the "23" number indicates that the rice in the brew has been polished to only 23% its original size, a borderline comical amount of refinement. Made in Hyde Park, New York, there is simply no more extravagant sake made in the United States. Beautiful complexity, fruit, sweetness, balance.
